Recipe: Italian Wedding Cookies

 This is one of my go-to holiday cookies! It's always requested by family and friends, and it's a personal favorite of mine. I grew up eating these Italian cookies, so it was definitely a recipe I had to veganize! Enjoy :)

Temperature: 350F


  • 1 Cup vegan butter
  • 3/4 Cup sugar
  • 1 tsp anise
  • 1 tsp lemon extract
  • Egg replacer for 3 eggs
  • 3 Cups flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • ICING: 1 cup of powdered sugar mixed with 1/8 cup of soy milk, 1/8 tsp of anise

  • Cream the butter and sugar
  • Add in the anise and lemon extract
  • Add egg replacer
  • Mix all dry ingredients together and then combine with the wet ingredients
  • Roll dough into 2 inch balls and bake on a cookie sheet lined with parchment paper
  • While cookies are hot, spoon the icing onto the cookies until they are covered and add sprinkles
