Meat Free Athlete's Vegan Chilli

Easy to make, delicious, and packed with plant protein! This meat free vegan chili recipe is a family favorite, and it's a versitile meal, great for comfort food, or muscle recovery fuel after activity.

Prep Time: 60 - 90 Mins


  • 2 cans of tomatoes
  • 2 cans of chickpeas
  • 2 cans of red kidney beans
  • 1 can of black beans
  • 1 pack of fresh mushrooms
  • 3/4 cup of corn
  • 1 yellow onion
  • 1 pack of chili spice (I use Old El Paso)
  • 1/8 cup of chili powder
  • 1/2 tbs cayenne pepper (or to taste, depending on how spicy you like it!)

  • Strain all of the canned ingredients and add to deep cooking pot
  • Dice onions and add to pot
  • Add mushrooms to pot
  • Turn on medium heat and stir the ingredients
  • Mix in half of the chili powder
  • Mix in 1/4 of the chili spice
  • Mix in 1/2 of the cayenne pepper
  • 10-15 minutes later, mix in 1/2 of the remaining chili powder and 1/2 of the remaining chili mix
  • When chili becomes more wet, mix in the remaining spices (chili mix, chili powder, cayenne pepper)
  • Stir occasionally
  • Cook for approximately 45 minutes with cover on, stirring occasionally
  • Remove cover, and stir occasionally for 15 minutes, or until the chili thickens to desired thickness
