Energy Boosting Alkaline Recipe - Meat Free Athlete #Vegan

This is one of my go-to energy boosting meals! It's healthy, easy, alkaline, and what I eat as a vegan athlete :)



Difficulty: Easy
Prep Time: 10 Mins if quinoa and wild rice are prepped. (30-40 mins if you need to cook the quinoa and wild rice)


  • 3-4 cups kale
  • a little himalayan pink salt (to taste)
  • 1 cup tomatoes, chopped
  • 1 cup wild rice
  • 1 cup quinoa
  • 1/2 - 1  avocado
  • 1 lemon
  • optional addition: chickpeas
  • optional addition: cucumber

  • massage kale with fresh squeezed lemon and a little pink salt (approx 2 minutes, until kale becomes soft)
  • add in all ingredients and mix well with any remaining fresh squeezed lemon juice
  • enjoy!
