This is one of my favorite easy healthy snack recipes, no-bake chocolate chip cookie bites! It’s an oil free vegan recipe that’s super quick to make, and you can easily substitute the chocolate chips for raisins or other dried fruits if you’d like

No-Bake Chocolate Chip Cookie Bites

Equipment
- Food processor
Ingredients
- 1/4 cup oats
- 1/2 cup cashews
- 3 tbsp whole wheat or gluten free flour
- 1/2 tsp ground flax seeds
- 1/4 tsp pink Himalayan salt
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1-2 tbsp vegan chocolate chips
Instructions
- Add oats, cashews, flour, ground flax seeds, and pink Himalayan salt to a food processor and blend until it is a coarse powder.
- Then add vanilla extract, maple syrup and blend until well blended. Remove blade, and then add vegan chocolate chops and stir in with a spatula or spoon.
- Shape mixture into balls. (I shape them into balls that are a little smaller than golf balls)
Great recipe! I can snack guilt free. Used raw unsalted cashews and whole wheat flour. Non-vegan family loved it too. Working on converting them slowly. THANK YOU.
