No-Bake Chocolate Chip Cookie Bites

Equipment

  • Food processor

Ingredients

  • 1/4 cup oats
  • 1/2 cup cashews
  • 3 tbsp whole wheat or gluten free flour
  • 1/2 tsp ground flax seeds
  • 1/4 tsp pink Himalayan salt
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1-2 tbsp vegan chocolate chips

Instructions

  • Add oats, cashews, flour, ground flax seeds, and pink Himalayan salt to a food processor and blend until it is a coarse powder.
  • Then add vanilla extract, maple syrup and blend until well blended. Remove blade, and then add vegan chocolate chops and stir in with a spatula or spoon.
  • Shape mixture into balls. (I shape them into balls that are a little smaller than golf balls)

  1. Great recipe! I can snack guilt free. Used raw unsalted cashews and whole wheat flour. Non-vegan family loved it too. Working on converting them slowly. THANK YOU.
