Vegan Ginger Molasses Cookies

I have always loved ginger molasses cookies! So, I had to come up with a vegan recipe that’s chewy and packed with flavor!

Vegan Ginger Molasses Cookies

Ingredients

  • 1/2 cup vegan butter
  • 2 cups sugar
  • 1/2 cup fancy molasses
  • 2 egg replacers
  • 2 tsp vanilla extract
  • 4 cups flour
  • 4 tsp baking soda
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp cloves
  • 1 tsp pink Himalayan salt

Instructions

  • Preheat oven at 375F
  • Cream together butter and sugar
  • Mix in fancy molasses, 2 egg replacers, & vanilla
  • In a separate bowl, mix all of the dry ingredients together
  • Then add the dry ingredients to the wet ingredients and mix well
  • Scoop cookie dough onto cookie sheet
  • Bake for 8-10 minutes (makes about 16 cookies)
