Vegan Ginger Molasses Cookies

I have always loved ginger molasses cookies! So, I had to come up with a vegan recipe that’s chewy and packed with flavor!

Vegan Ginger Molasses Cookies

Oven Temp: 375F | Bake Time: 8-10 Minutes | Makes about 16 cookies

INGREDIENTS

  • 1/2 cup of vegan butter
  • 2 cups of sugar
  • 1/2 cup of fancy molasses
  • 2 egg replacers (I used Pane Riso)
  • 2 tsp vanilla
  • 4 cups of flour
  • 4 tsp baking soda
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground cloves
  • 1 tsp pink himalayan salt

INSTRUCTIONS

  • Cream together butter and sugar
  • Mix in fancy molasses, 2 egg replacers, & vanilla
  • In a separate bowl, mix all of the dry ingredients together
  • Then add the dry ingredients to the wet ingredients and mix well
  • Scoop cookie dough onto cookie sheet
  • Bake at 375F for 8-10 minutes (makes about 16 cookies)
